Domaine Tollot-Beaut Bourgogne Pinot Noir is the family’s regional red, made by Jean-Paul Tollot in Chorey-lès-Beaune with the same care as the domaine’s village and Grand Cru wines. The fruit comes from the domaine’s own vines, planted between 1963 and 1984, so even this entry-level wine benefits from mature vineyards. The grapes are almost entirely destemmed and fermented in open vats, with the cap punched down daily, then the wine is aged in French oak barrels, around a fifth to a quarter of them new.
It is a classic, honest Burgundy. Expect a bright ruby colour and an attractive nose of red cherry, raspberry and redcurrant with gentle spice and a hint of earthiness. The palate is medium-bodied, juicy and fresh, with soft, fine tannins, a light touch of oak and a clean, savoury finish.
Serve at 15–16°C with roast chicken, duck, pork, game birds, salmon, charcuterie or mushroom dishes, or as a partner for a traditional Sunday roast. Domaine Tollot-Beaut Bourgogne Pinot Noir is drinking well now and will keep for 3–6 years.
Domaine Tollot-Beaut is based in Chorey-lès-Beaune, just north of Beaune, where François Tollot began planting vines in the late 1880s. His son Alexandre married Aurélie Beaut, giving the domaine its name, and in 1921 the family became one of the first in the region to bottle wine under its own label. Today cousins Nathalie, Jean-Paul and Olivier Tollot run the estate, with Jean-Paul making the wines in cellars that are, in parts, over 250 years old. They farm around 24 hectares, mainly in Chorey-lès-Beaune, with parcels in Savigny-lès-Beaune, Aloxe-Corton and Beaune up to Grand Cru Corton, using sustainable lutte raisonnée methods. Their Pinot Noirs are known for a serious yet thoroughly enjoyable style.
