Cave Talmard Mâcon-Uchizy is a village white from Uchizy, a small village in the northern Mâconnais with its own appellation. Here the flat alluvial plain beside the Saône rises west towards limestone outcrops. The wine is made entirely from Chardonnay grown on limestone soils with a clay-loam topsoil, mostly on south- and south-east-facing slopes, in a continental climate of warm summers and cold winters. The Talmard family farms with minimal intervention, and the wine is fermented and aged entirely in tank, with no oak, to keep the fruit pure.
In the glass it is clear and brilliant yellow-green. The nose is open, with ripe yellow fruit, citrus and slightly floral notes. The palate is medium-bodied and unoaked, with a precise, fresh attack and lovely citrus and ripe pear flavours. It has an attractive roundness balanced by a certain crunch, and finishes long and crisp.
Serve chilled, at around 10–12°C. It is a versatile partner for roast chicken, salmon, grilled sea bass, creamy pasta, mushroom risotto and Comté cheese, and it also makes a fine aperitif. Cave Talmard Mâcon-Uchizy is best enjoyed in its youth, over the next two to three years.
Cave Talmard is the family estate of Mallory and Benjamin Talmard in Uchizy, in Burgundy’s Mâconnais. The Talmard name appears in local winegrowing records from the 17th century, and Mallory’s grandfather Joseph first planted vines at Uchizy. Her father, Paul Talmard, chose to make and bottle the family’s own wine rather than send the grapes to the local co-operative. He later handed the domaine to Mallory and her husband Benjamin, and their son Marco has been taking a more active role since 2025. The estate has around 30 hectares of vines, almost all Chardonnay, within a larger family farm that also grows cereals, raises beef cattle and keeps flower meadows. The family puts biodiversity first and farms with minimal intervention, though without formal certification.
